I completely agree with your thoughts about Mulan! When I first heard they were casting Mulan, I was super excited about her being on the show, but I also felt really weird about it. After I watched her first episode, I found that while I really liked her character, I was uncomfortable with her being in OUAT's fairy-tale-land, for much the same reasons you outlined. I first heard the story of Mulan as a historical story as opposed to a Disney movie, and I was not very happy with what they did.
I was also displeased about the Mulan-Aurora-Prince Philip love triangle plotline, but I have since learned that a season and a half after I stopped watching, Mulan has practically-canonically been revealed to have a crush on Aurora (if the show actually does something about that thread, I may start watching it again). I found that I'm actually okay with a Mulan-Aurora-Philip love triangle, I'm just not okay with a Mulan-Philip-Aurora love triangle.
