This probably won't help your head-canon, but I do find it a nice (if perhaps unintentional) irony that Sebastian claims to loathe dogs. I mean, both dogs and cats have myth-connections to the demonic - black cats and hellhounds -- so it's not like there's a particular reason one'd expect Sebastian to like, or dislike, either. But you add in Sebastian's canonical hatred of dogs, and the fact that he was named after a (big, black, scary-looking) dog, and the question of who really named that dog... well, this is why I love this story. Lots and lots of canon-fodder.
Also: I have no idea whether the absence of the house staff is intentional, or if it's a plot-hole. But Vincent is definitely a character who requires more exploring. I suppose the only route to that (via flashback) would be through the previous butler... whose name right now just went right out of my head. The guy with the Japanese tea cup.
I can't recall the earlier chapters of the manga -- I didn't go back and reread from the start, so they're a little fuzzy. Should probably do that...
