Tyrion's actor is Peter Dinklage, one of the more well known midget actors. (Okay I seriously am not sure what the proper PC term is for that anymore. Little people?) The director/producer were both huge fans of the show and picked actors based on ... something. I'm not a fan of the guy they chose to play Jon either, really. Though that may be due to the heavily hinted at reveal of who's child he was; to give him hair like that he wouldn't match the description of either family.
TV!Robert seems pretty spot-on to Book!Robert. A fat, large man who was more suited for carrying a warhammer than actually sitting on a throne. Sean Bean works for Ned and only accepted that role because it would be for a single season and he apparently enjoys being typecast. Drogo is Jason whathisface from Stargate Atlantis -- he is really just a Hawaiian surfer kid who got the role and seems pleased that he can wander around and be alternate universe Conan (and actualy, he's going to be Conan in a reboot here shortly). I like the actor for Jaime a lot for a few different reasons, but his actor seems to have a grip on the character -- actually, most of the actors who have been interviewed haev read the books and have a good grasp of their character motivations.
The guy who plays Littlefinger is the absolute perfect cast -- he comes off as a backstabbing weasel the moment you see him. He wont show up until they get to King's Landing though.
The Jaime/Cersei thing came around I think in Feast, where we found out she's basically just a whore who slept with whoever might give her an edge politically. You did make a point though; for someone who is as dominated as she is and who has the motications she does, to have Jaime take her the way he did made no sense per her character -- if anything she'd be on top for a position of dominance.
