Perhaps... but from what I've seen, "chitlins" is something that most Americans seem to treat as something We Do Not Eat (Because We Are Not Ignorant Backwoods Yokums). I'm sure if we called "intestines" by their Latin name (or something equally fancy) then no one would think twice, and in fact would consider themselves quite cultured for eating the latest thing... even if it really is just chitterlings.
Reminds me of my sister's comment after a date, in high school. She and her boyfriend had gone to some restaurant downtown, and my sister had escargot. My mom (who knew full well my sister knew, but was teasing) said, "you mean snails."
My sister replied, "They taste better when you call them escargot."
