My favorite for "fanon overtakes canon" is the Weiss Kreuz fandom, where the canon is just so freaking bad in nearly every sense of the word, yet has such a wonderful crackalicious premise (four assassins! who are florists by day!) that it's no surprise fandom stepped in to repair the multiple chinks in the storyline, along with the massive gaping plotholes, and overcome the absolutely pathetic animation quality. I mean, at least GW, as part of the Gundam franchise, isn't going to be quite so much the massive plot-hole manufacturer, though the Gundam tropes themselves are a sort of repeated fanfiction on the original Gundam, anyway.
In fanfic, you can assume the reader's emotional involvement, and canon as a basic template the reader already has. In original fic, you need to start from zero on both of those.
Absolutely -- you pretty much summed up the entire post very neatly. Man, I need to start learning to do that myself, but I have too much fun wandering around and poking at different ideas to ever manage to get so concise. Le sigh.
