I think the reason he may never have entertained ditching the Old Man was because if, for whatever reason, Ewon left him, that the Old Man would therefore still be around. Mookyul wouldn't be alone.

It's a cynical view of their relationship, I still don't think the two are related. Somehow I'm convinced that even if he had been alone, Mookyul would still have acted the same way towards Ewon and put himself out there. Because just like Ewon deliberated and chose to put his trust in Mookyul with no guarantee (and even with a nagging doubt regarding the Chairman) Mookyul would have done the same.
And that's assuming Mookyul really does consider the Chairman as his safety net, which I'm not convinced of. Imo, Mookyul already did put himself out there.

If he truly were his safety net, Mookyul would somehow be content with the way things turned out, but as last chapter showed, he's not, and it's bound to increase in the next chapters.

Besides, he has never entertained ditching the Chairman, Ewon showing up just didn't change that equation (yet).
As he said, in his mind his relationship with the Chairman and with Ewon are totally unrelated. On the other hand, Ewon rightfully thinks otherwise and sees the Chairman for what he is, a "rival" for Mookyul's love, hence the "do you have two hearts?" comment.
